What’s on my mind today? Cool and creamy summer desserts!
I don’t bake a lot in the summer, but I do like to whip up simple and delicious treats that don’t require a lot of time in the kitchen.
This weekend I made a super-simple banana pudding poke cake:
Like most poke cakes, it’s so easy it’s almost not even a recipe. Just make a yellow cake mix according to the package directions. Once it’s cool, poke holes in the cake with the handle of a wooden spoon. Prepare 2 boxes of banana cream pudding according to the package directions and whisk until soft set. Pour over the cake and chill. Once the pudding is set, frost with whipped topping and sprinkle crushed vanilla wafers over the top. That’s it! Add sliced fresh sliced bananas if you like.
