- 5 oz white rum
- 2.5 oz simple syrup
- 1 splash club soda
- 1 pineapple spear
- 12-15 fresh mint leaves
- 1 fresh lime
- 1-2 tsp vanilla
- ice

Instructions
- Pinch off fresh mint leaves
- Put mint leaves (without the stems) into the bottom of a glass. Dice your pineapple spear and add that plus the vanilla, simple syrup and juice from 1 lime. Muddle until mint leaves and pineapple start to break up a bit.
- Add 5 ounces of rum and splash of club soda. Pack your glass with ice and pour it into a cocktail shaker and give a few good shakes.
- Pour back into glass and garnish with mint leaves and/or a pineapple wedge. Bendy straws make everything taste better too. š Enjoy!
