My Fast & Easy Turkey Sausage Penne is one of my go-to favorite recipes for crazy busy weeknights.
It’s SO simple to put together, and you can adjust the heat depending on what kind of sausage you use and how much crushed red pepper you throw in. I like mine a little spicy. :-). You can use regular pork sausage if you like.

- 2.5 cups uncooked penne
- 1 lb turkey sausage hot or mild, cut into 1 inch pieces
- 1 large onion sliced
- 1 med green bell pepper sliced
- 2 cloves garlic minced
- 1 tble olive oil
- 1 14.5 oz can diced tomatoes I use the kind with garlic, basil & oregano
- 1 8oz can tomato sauce
- 2 tble tomato paste
- 1/4 cup red wine medium to dry wine - red zin, shiraz, Chianti or cab
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/4-1/2 tsp crushed red pepper flakes
- grated pecorino romano for sprinkling

- Cook paste until al dente
- In the meantime, cook the sausage, onion, pepper and garlic in oil over medium heat until the sausage is no longer pink and vegetables are tender. Drain fat.
- Add the tomatoes, tomato sauce, tomato paste, red wine and seasonings. Cook on med-low heat for about 5 minutes.
- Drain penne and toss with tomato-wine mixture. Sprinkle with grated pecorino romano.
