I have a confession to make – I am TERRIBLE about using up ingredients in my kitchen. I have the best of intentions, but every few weeks I seem to be dumping out leftovers that we never quite got around to, or purging out of date pantry items or ushering some sad wilted vegetables to the trash. It’s a huge waste of money and I’ve been making a real effort to stay on top of it lately, which is how I ended up trying out the recipe for these Banana Nutella Oatmeal muffins from Nikki, the Chef in Training.
Granted, Nutella is not the hardest thing in the world to “use up”, but I did have a half a jar languishing in the back of my cupboard along with some ripe bananas I needed to do something with. When my quick Pinterest search turned up this recipe I figured it was meant to be.
(Baby steps, right? Today it’s the Nutella, tomorrow maybe I’ll rescue that fading head of escarole…)
BTW – the banana/Nutella/oatmeal combo in this recipe is pretty spectacular, and I’m definitely adding it to my regular rotation.

- 2 cups flour
- 1 cup old fashioned oats
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 2 very ripe bananas mashed
- Nutella

- Preheat oven to 375 degrees
- Combine flour, oats, sugars, baking powder, baking soda and salt in a medium mixing bowl. Combine well.
- Combine the egg (beaten), milk, vegetable oil. vanilla and mashed bananas in a large mixing bowl.
- Add flour mixture to liquids and stir to combine. Do not over mix.
- Liberally spray a muffin tin with cooking spray. Divide batter equally and top with about 1 tsp each of Nutella. Use a knife or toothpick to swirl the Nutella into the tops.
- Bake at 375 degrees for about 20 minutes or until toothpick comes out clean.
