Am I the only one out there with odd gaping holes in their cooking abilities? I consider myself a pretty decent cook and there isn’t much that I won’t try to make at least once, but there are a few things that have always eluded me:
- Homemade whipped cream
- Homemade pie crust
- Pancakes and waffles
Weird, right?
My attempts at these three things range from “not so great” to “not even edible”, so I usually just work around them – I make a mean frittata for breakfast and I substitute Cool Whip and refrigerated pie crust when the need arises.
(or better yet – I talk my mom into making one of her insanely good pies)
I have decided that 2016 is the year that I master these simple recipes that everyone else in the world seems to know how to do.
So….I took a stab at waffles this morning.
I found this yummy-looking recipe for Banana Bread Waffles over at Diethood AND I happened to have a few ripe bananas that needed to be used.

It gives me hope that I will someday master the art of pancakes. 😉
PS: Did you know that the easiest, best way to make bacon is in the oven on a cookie sheet?

All you do is completely cover the baking sheet with parchment paper, spread out your bacon, and stick it in the oven at 400 degrees until it’s as crispy as you want it. No muss, no fuss and no need to destroy your stove.
And the best part?
As long as you leave a parchment paper edge all the way around your pan (I leave about 2 inches all the way around), you can leave the grease to cool and solidify and then just lift it off in one solid piece. You will be left with ZERO grease on your pan and ZERO clean up.
